Vanilla Bean Balsamic Berry Parfait
1 cup blueberries
1 cup raspberries
1 cup strawberries, cut in half lengthwise
2 Tbsp. OWOC Vanilla Bean Balsamic Vinegar
¼ cup confectioners’ sugar
1 tsp. grated orange zest
½ tsp. ground cinnamon
One 15 oz. container ricotta cheese
4 tsp. chopped walnuts
Combine the blueberries, raspberries, strawberries and Vanilla Bean Balsamic in a bowl until well combined. Let stand five minutes.
Meanwhile, pulse the confectioners’ sugar, orange zest, cinnamon and ricotta in a food processor until smooth. In each of four parfait glasses, alternately layer the berry mixture with the ricotta mixture, ending with the berries. Top each with one teaspoon of toasted walnuts.
