Chicken with Tomato and Apple Balsamic

Ingredients
- 3 Tbsp.OWOC Regional EVOO, your choice
- 1 cup OWOC Red Apple Balsamic Vinegar
- 4 chicken halves
- Salt and freshly ground black pepper to taste
- 3 Tbsp. chopped onion
- 1 Tbsp. minced garlic
- ¼ cup white wine
- 3 cups canned tomato
- 3 Tbsp. butter

Directions
- Season the chicken with salt and freshly ground black pepper.
- Heat a large sauté pan with EVOO until hot. Add the chicken and sauté until golden brown on all sides.
- Add the onion and garlic.
- Cook for two minutes.
- Transfer meat to a plate and keep warm. Deglaze pan with the wine and vinegar.
- Reduce by half. Add the tomato, butter and chicken.
- Reduce heat and simmer for 20 minutes until chicken is cooked.
- Serve.
